The certified organic and vegan DOCG Spumante Conegliano Valdobbiadene Prosecco Superiore Extra Dry is the result of the valorisation of a territory historically suited to viticulture. We respect this magnificent area of ??cultural and food and wine tourism and enhance it by producing according to the criteria of sustainable and organic agriculture in the hills which make man’s work heroic but which give the wine the authenticity of a unique land. Our ?Stefany? was born in 1994 and its name is dedicated to the second daughter of Settimo Pizzolato, one of the very first producers of organic wines with more than 30 years of experience. An organic sparkling wine which, today, in its new bottle is part of the prized “Collection Line” together with the other two wines “Frederik” and Valdobbiadene Brut. It is excellent for accompanying desserts and fruit and is ideal to offer during an aperitif. WINEMAKING The grapes are pressed and the must obtained is left to decant. Selected yeasts are added for alcoholic fermentation at a controlled temperature of around 14?C. The second fermentation is then induced in an autoclave for at least 30 days until the desired pressure is obtained. ATM. above 4.5.
